Dragon*Con and Pork Roast

     Hi guys I hope all is well. I’ve decided to stop apologizing between each blog for the length of time I take to write each one, I’m simply not a person who writes on a regular basis. I’ve never been able to keep a daily journal or diary although I did keep one. I tend to go a few weeks to months sometimes even years between entries. I will however start trying to put up a new recipe at least once a month because I have been told by a friend that I admire to keep them coming. 

     I recently went to dinner with some friends that go to our old church, I’ve known them since I was a child and since I’ve become an adult I’ve gotten to know them much better. This couple is a couple that Ron and I absolutely adore, they are one of those many couples that newlyweds tend to look up to and strive towards. I love surrounding myself with successful marriages and people, its a positive influence. Anyway, at the dinner my female friend looked at me and said, “I love your recipes and blog. I find it an inspiration and I bookmark all your dinner recipes, they are so delicious! You and another young lady are an inspiration to me.” Now to know I have that kind of impact on even one person really makes me feel like I’m doing the right thing. I can’t believe it! I’m inspiring this woman that I have looked up to growing up! Its truly humbling and I’m so happy to know that I am helping someone out and it just makes me want to continue. Thank you.

     On a super fun note we went to Dragon*Con this year and I got to meet Natalia Tena. For those of you who don’t know who that is, its Tonks from Harry Potter and Osha from Game of Thrones! She was a super cool chick and I have recently found out she is the lead singer and plays accordion in a band called Molotov Jukebox. Ron and I were Hank and Marie from Breaking Bad one day and then we had a group dress up as Ace Ventura, Dan Marino, and old folks from the old folks home. It was quite the epic group costume if I do say so, we had a blast dressing up. Our Dragon*Con experience wasn’t as great as the previous years, they didn’t have as many cool panels as last year. There were some other minor glitches too like I lost my badge but someone found it and turned it into one of the many awesome volunteers so I got it back which was nice. We had fun but I think we’re going to do another convention next year like Gen Con since I’ve never gone before and hubby hasn’t been in 5 years. We want to spice things up :-) anyway enjoy our pictures!

     Today’s recipe is one of my own concoctions. I wanted to make a Crock-pot pork roast and I didn’t
like any of the recipes I found. Its a very simple recipe to do but I didn’t like the spices used in other
people’s versions so I played around with my own and it came out really tasty. The calories for this recipe come out to 1230 total and its four servings at 307.5 calories each. Its delicious and only uses three spices and three ingredients.

Crock-Pot Pork Roast:
1 lb of Lean Pork Loin
6 oz of Carrots
4 Red Potatoes
4 Cups of water
Salt
Pepper
California Seasoning

Season pork roast with salt, pepper, and California seasoning. Make sure to rub it in.

(Optional: wrap pork in aluminum foil and sit in fridge for about an hour. This will let it marinate.)

Add pork loin in crockpot with water, carrots, and potatoes. If the water isn’t covering the pork add one more cup, it should come up to just the top of the pork loin you don’t want to put too much water or else it will dilute the flavor.

Once everything is in add some more California seasoning, salt, and pepper to the water, this helps the flavor soak into everything else in the pot.

Put your crock pot on low and let it cook for about 8-9 hours, the pork should be falling apart when done. If you’re pressed for time you can cook it on high for 5-6 hours.

Again this makes 4 servings at 307.5 calories per serving.
