Need a quick recipe for those long crazy days? How about salmon?!
Today I just want to say thank you. My last blog post had a lot of response to it, I didn’t even realize so many people read my posts. Thank you!! I am blown away by all the amazing people that talked to me afterwards. I didn’t post it for any particular person I simply felt that it was a subject that no one seems to address. Our society deems it taboo to talk about sex and the problems that we’re having conceiving but oh my guess what?! It happens to more couples than you think, so thank you again for the amazing positive response. It makes me feel like my blog is not a waste of internet space.
Now on to the good stuff, I have a recipe today! Yay I know its been a long time right? Well, I was making a favorite of ours and thought, hey this is something a lot of people would really like because its easy, its quick and its only 230 calories plus whatever sides you choose. Ya I said it, 230 calories for a quick and easy meal! This recipe is called Honey Glazed Salmon, it is not one of my own creations but its one of the recipes I discovered from some random site throughout the years. I think this particular one is a Weight Watchers recipe.
So what you need is honey, orange juice, lemon juice, hoisin sauce, dijon mustard salt, pepper, and salmon. Hoisin sauce is in the asian food section of your local grocery store, its common enough most stores should have it, if you can’t find it go to a farmer’s market. It lasts for a long time as long as its refrigerated. I get ours at Kroger or Ralph’s if you’re on the west coast.
Hoisin Sauce
Honey Glazed Salmon:
2 Tbsp Honey
1 Tbsp Orange Juice
1 Tbsp Lemon Juice
1 Tbsp Hoisin Sauce
2 Tbsp Dijon Mustard
Salt
Pepper
4 6oz pieces of Salmon
- Preheat broiler
- Combine first seven ingredients and stir with a whisk
- Place salmon in a baking dish that has been sprayed with cooking spray
- Brush with honey mixture
- Broil 12 mins, basting frequently with honey mixture.
This is what the mixture looks like once its been made.
As you can see the oven door is open while the salmon cooks. Don't open completely or close it all the way or else you'll dry out the salmon.
So our honey crystallized but if you put it in some boiling water its good to go again. It only took about 2 minutes to be useable!
We had a steamer and mashed potatoes with our salmon, the total meal calorie count was only 527 for all of this delicious food.
