Quesadillas and making a weight loss goal!


Heyo! So it's been a crazy couple of weeks and I realize I did not write last week. I missed Wednesday and Thursday and after that I got busy doing packing things and just forgot about it till Sunday and at that point I might as well wait till today! I was determined to write this today so I'm going to be late for my stream because of it but dangit I'm gonna write it! So last week I didn't gain or lose anything I just maintained which is good. Other than that I just set up stuff to start packing. Oh we're moving to California in 6 weeks so we have a lot of stuff going on right now. Hubby went to New York for a friend's 50th and had a blast. He felt good showing off his progress everyone was really impressed! I'm so proud of him. He is almost in the 200 club ya'll it's awesome. What else? Oh we packed half his books and our dining room is getting filled so we need to transfer some stuff to storage and that's about it for last week aside from work things.

Now that you're pretty much up to date I can tell you about my weigh in this morning. So I slept in today, not gonna lie I'm so exhausted from all the packing and cleaning and what not on top of my regular streams and work stuff. So when I got up to take my meds I stepped on the scale at 272.8 meaning I had gained. Made me a little bummed but I also know that I should be starting here soon so I chalked it up as water weight and went back to bed. When I woke up I had to poop and after that since I still hadn't ate I decided to weight myself, I went down to 268.5 so apparently I had a 4lb poop to get rid of so now I'm officially 20 lbs down. Moral of the story, if you've gained a little bit it could be water weight or a big poop so don't get flustered over a couple of pounds in a week because it happens especially when you're someone who deals with periods. Our bodies change consistently. Yes I like to weigh myself weekly but only to keep track of the overall trend. Am I losing weight overall or am I actually plateauing and just going up and down but staying in the same range? Is the trend showing up or down or consistent that's why I weigh weekly. I still get frustrated when I don't lose but I stop myself and remind myself that overall I've lost 15 lbs or 20 lbs or whatever the total is at that moment. So keep it up my friends.

Now for the fun stuff, I was reminded recently about quesadillas. I love them and I didn't think of them as an alternative to one of my favorite foods, grilled cheese. Quesadillas are essentially a grilled cheese in tortilla form! I know what you're thinking, tortillas are bread and they have lots of carbs, yes regular ones are however there are now tortillas that have 4-6 net carbs in them depending on which brand you buy. Remember when I mentioned this before and even suggested tortillas for wraps instead of sandwiches? Well, same goes for a quesadilla. Just get some shredded cheese and anything else you like to put on a grilled cheese and go to town. Just warm the tortilla up in the pan, sprinkle the cheese on top, add your toppings on one side and once the cheese starts melting flip over one side and you're done! Oh my goodness it was so tasty I had it for lunch today I'll post a picture for ya. Some of my favorite things in grilled cheese are tomatoes, I didn't have any to try this out today but next time I will make sure to add tomatoes.
