White bean chicken chili (crockpot)
Hey guys I apologize for the delay I just got really lazy this last week. As mentioned before I have been editing for a local production company. They really like my work so I am super excited, I hope they continue sending me more videos to edit. What else do I have? Oh yeah I lost 7 lbs last week because I helped some friends move and let me tell ya, it was quite the workout! I’m finally down to 260.8 lbs my goal this week is to step on the scale and at least be 258, big goal 255 we’ll see. I’m not going back up. Ron and I started doing P90X yesterday because he never gets home in time to go to the gym; I happen to have it so I got it out and said lets do this! I’m still working towards my goal to do a 5k; therefore, I had visited the gym earlier yesterday evening so I got my butt kicked. Today I will go do a walk around Piedmont Park with a galpal of mine that is doing a 5k with me. If you are in the Atlanta are and are interested check it out we are doing the http://www.hotchocolate15k.com/atlanta/ we are obviously doing the 5k portion of the run...haha don’t know yet that I’ll be running but we’re definitely doing it. I do hope to see some of you there that read my blog, I’m excited about this. Our previous 5k got canceled because we misread some of the requirements and couldn’t get enough money raised but this time will be different and I now have a few more months to train. (Can’t lie I’m a little glad about this because I was definitely not ready to do the other 5k seeing as how it was in 2 days!!)
Ok so I promised a White Bean Chicken Chili recipe and here it is. I decided to start putting up video tutorials of our recipe so you can see what we’re doing instead of just pictures. My specialty is film so why not incorporate it into my blog, no I don’t consider this vlogging because I personally don’t like getting in front of the camera and talking about myself I’d rather write about myself, haha. All joking aside this is just a simple vidoe of how-to-do-it. I’m still going to write out the recipe so you have a reference to go back to. For this first recipe it is a simple crockpot recipe so there isn’t much to it but I wanted to start simple.
White Bean Chicken Chili Recipe (6 points plus a cup)
Ingredients:
1 Carroll Shelby’s White chicken chili kit.
(This can be found in the ravioli/pasta aisle or spices aisle, each grocery store differs. If you need a visual reference check out the video.)
3 Cans of white northern beans or you can use 1 lb of dried beans.
(I haven’t done much research on dried beans but it seems that you get the same thing out of them whether or not you soak them so I’d like to think you could just throw them in with the rest of the food and let it cook. If you do this tell me how it came out.)
2 lbs of chicken
3 c. of water
1 Crockpot (Mine is 5qts I recommend bigger than 1qt because it makes more than that)
Directions:
Pour the water in the crockpot then dump all of the chili kit in and stir with a whisk. After that dump in the chicken and beans (drain liquid if using canned or presoaked beans) cover and turn to low for the day. Let cook for about 8-10 hrs.
Very simple recipe so feel free to experiment and tell me what you’ve done!
